Apfel Strudel - gezogen (apple strudel)
This is a recipe from an old Austrian cookbook : The golden book of kitchen (Das goldene Buch der Kueche). I inherited it from my mother in law, and she got it from her mother. I love to cook and bake out of it.
Here is one of my favourite recipes, takes a long time, but it is worth it.

Ingredients for dough:
About 2 cups flour
3 Tblsp. Vegetable Oil
¼ l luke warm water
pinch of salt
Filling:
3 pound apples
½ cup raisins
½ cup veg. oil
1 cup breadcrumbs
½ cup sugar or icing sugar
1 Tblsp. Cinnamon
1 Tblsp. Vanilla
Preparation:
Put flour on a pastry board, in the middle make a little den and put salt, oil and part of the water and mix with a wide knife. You will get a soft and pasty dough, which you now knead with your hands. I fit is too hard, take more water. Put some more flour on the pastry board and work on the dough until it is dry and comes off the board and your hands. Form a ball and cover with a bowl and let rest for about 30 minutes.
Now start with the filling:
Peel the apples, get the apple core out and chop fine. Put in bowl and mix raisings, sugar, cinnamon all together. Heat fry pan with oil and roast breadcrumbs until light brown. Put aside
Put a tablecloth over your table, you need a lot of space. Put some flour on the cloth, put the dough on it and start to roll out with a rolling pin.
Now the ‘Special’ starts – you have to pull out the dough! Get some flour on your hands and start from the middle to outside and pull the dough until it is thin like paper!
Put the roasted bread crumbs on the dough and spread the apple mixture on the lower 2/3 of the dough. Now start to roll the whole dough with filling with help of the cloth and form a roll. Heat oven for 375F. Put a parchment paper on your baking sheet and get the dough roll on it. Melt some butter and smear on dough. Put in oven and let bake for about 1 hour.
When ready, put some icing sugar on – best to eat it warm. Tastes excellent with ice-cream or whipping cream. Enjoy!
